New menus - Reduced application collection

The current K12LTSP menus are seem to have a Kitchen Sink thought process - Hey, here is a great new app - stick it on the menus==== This is probably to do with KDE/Gnome automatic menu management. This can cause confusion for first-time users of the system - where do I start ? I would like to drive a process to create a reduced set of applications for a K12 teaching environment, selected for Thin-Client friendliness, coverage of subject area, and application quality. I would dearly like to have One good application for each task - i.e. we must choose between Thunderbird and Evolution. Feel free to add both below, but add comments as to why it should be included (or not). ====
Unfortunately I am not an educator.
The first thing to specify is categories. I have a set below, but I welcome any changes. I am picking gnome over kde apps - we need one flavour ?
Should Categories be ordered/flagged by Grade ?
After the proposed menu, I list likely packages offered with K12LTSP. Remember, these are RPM package names, not the applications themselves. Sometimes they are the same name, but not always. kdeedu contains many applications.
